A couple weeks ago my daughter participated in a Cake Pop class at Le Pain Quotidien at Fashion Island in Newport Beach. The class was just for kids (but parents you need to stick around for the photo ops) and requires absolutely no prior baking experience. We had a nice small group of 7 that was led by two of their bakers.
camera notes: I brought my Contax 645 and shot a roll of Fuji 400h. The room had on wall that was floor to ceiling glass which created the most beautiful fill light. Look at the skin tones one the shot below, that's near perfect, well in my eyes at least.
The kids started with a bowl and a small scraper, carefully incorporating butter and sugar to create buttercream frosting.
Next they were given prebaked slices of freshly baked chocolate and vanilla sheet cake. They combined a small amount of the buttercream with the cake to make moist round cake pops.
They rolled dozens of cake pops and lined them up on over sized baking sheets. With a little bit of melted chocolate sticks were secured and then sent to the ovens to bake. The kids were treated to a nice al fresco lunch with the chefs.
When the cake pops had cooled enough the kids dipped them in tempered chocolate and then decorated them by drizzling more chocolate on top and adding a sprinkle or two.. or three or four.
It only took a few minutes for the chocolate to harden enough to be placed in bakery boxes for the ride home. They let the kids eat and take as many as they could carry. The cake pops were so moist and so delicious that I would make them again and I'm not a cake person. Recipe to follow.
